21 Days of gratitude recipe: Christmas Brownies with Santa’s hats

Bianca Davies from the Secret life of Bee whipped up these delicious Christmas Brownies for us and she made it even more decadent when she added the Santa’s hats made of strawberries and buttercream icing.

21 days of gratitude Christmas brownies recipe

Christmas Brownies 

{makes 16}

140g butter, melted 
265g sugar 
2 large eggs 
1 tsp vanilla paste 
1 tsp cinnamon 
1 tsp all spice 
60g flour 
75g natural unprocessed cocoa powder 
pinch of sea salt 
50g chocolate chips 
50g pecan nuts, roughly chopped 
handful of fresh strawberries 
white buttercream icing

Preheat oven to 170˚C. Grease and line a 20cm brownie tin. 
Whisk the sugar and eggs together until light and creamy. 
Add the vanilla, cinnamon and all spice. Mix well. 
Pour in the melted butter and whisk. 
Whisk together the flour, cocoa powder and sea salt to combine. 
Fold into the wet ingredients and finally sprinkle in the chocolate chips and pecan nuts. 
Pour into prepared brownie tin and bake for 25-30 minutes. Take care not to overbake. 
The centre should be fudgey. 
Allow to cool completely before slicing. 
Serve topped with trimmed strawberries and use white buttercream icing to pipe little Santa hats.
