21 Days of gratitude recipe: 5 Minute healthy vegan mug cake

I’m sure everyone’s had that sudden sweet craving, I usually get it after eating something salty (some say it could be that your food is too salty, but I am in denial). Michelle Parkin have the perfect solution for us: 5 Minute healthy vegan mug cake. Quick, healthy and vegan. Sure ticks a lot of boxes.

You know, sometimes you just feel like a little sweet treat but you don’t feel like lots of effort… Well this little mug cake will fix that in under 5 minutes flat!

2 tbsp wholegrain spelt flour ( you can use whatever flour floats your boat here – normal flour, wholegrain etc) I really like the texture of the spelt flour

1/2 tsp baking powder

1 egg or 1 flax egg (to make a flax egg, mix 1 tbsp ground linseed aka flax seed with 1 tbsp water …TADA! Flax egg!)

1 1/2 tbsp coconut oil , melted

2 tbsp non-dairy milk ( I used soy milk, but you can use Almond / Rice milk)

1 tsp vanilla essence

1 tsp maple syrup (or honey if you are not making it Vegan) … add two teaspoons if you prefer your treats uber sweet!

2 tbsp Peanut butter (Black Cat is the best in my books, no added sugar and salt version has no additional nasty things like TBHQ etc!)

Dark chocolate, grated or finely chopped. I used about 1 tbsp , but you can go nuts here!

Generous pinch of salt

vegan mug cake recipe

In your mug, mix together the flour & baking powder, followed by all the other ingredients.

Pop in the microwave for 2-3 minutes on high and allow to cool a bit before tucking in!

This little pudding would also be amazing with a ball of quick frozen banana ice cream or some whipped coconut cream!
